Natural Advantage introduces natural dimethyl
sulfide (FEMA# 2746; CAS# 75-18-3). This material
is EU and US natural, kosher
and non-GMO. Dimethyl sulfide
occurs naturally in asparagus,
cabbage, cocoa, coffee, corn,
cooked chicken, tomato, whiskey and wine. Taste and
odor characteristics are sweet corn and malty. It is used
in vegetable, cocoa, coffee, fish and some dairy flavors.
Used at 0.001 - 2 ppm as consumed in finished goods.
Natural Advantage introduces natural thialdine
(FEMA# 4018). This material is EU and US natural,
kosher and non-GMO. Thialdine occurs naturally in
cooked beef and used in savory and meat flavors. It
has an aroma and flavor of roasted meat, popcorn or
shrimp, dependent upon use levels. Ideal levels of use
are between 0.5 to 2. 5 ppm.
Sigma Aldrich introduces kosher and halal phenyl
ethyl dimethyl carbinyl isobutyrate, ≥97%, FG
(FEMA# 2736, CAS# 10031-71-7). From 5 to 10
ppm, this material’s taste characteristics exhibit a
fruity, slight tropical mouthfeel with floral, green
and tropical pulpiness of papaya and mango. Its
odor characteristics are neat, subtle, sweet and fruity
nectar-like with floral, slight honey and green tropi-
cal fruit nuances. This ingredient’s slightly sweet
mouthfeel would work well in white grape, papaya,
pineapple, mango, passion fruit, kiwi, lychee and
rambutan. Its honey nuance is not pronounced but
does impart an interesting fruity sweetness.
The company also offers kosher and halal
diethyl succinate, natural, ≥99%, FG (FEMA# 2377,
CAS# 123-25-1). From 10 to 50 ppm the material’s

FEMA# 3829, CAS# 68133-79-9), for use in fragrances
and flavors. This ingredient is kosher and halal.

especially in apricot, plum and lychee applications.
Apritone also works extremely well in oral care flavors
due to its smooth, juicy profile.
