Vanilla extract 10 F (FEMA# 3106, CAS# 8024-06-4), from
Kancor North America Inc., has a sweet, floral, balsamic,
woody aroma of traditionally cured vanilla. Suggested applications include ice cream and bakery products, as well as liquid
and powdered beverages. The traditionally cured vanilla beans
are solvent-extracted and concentrated under vacuum to preserve the aroma. The product is composed of a natural extract
of vanilla, and stabilized in food grade propylene glycol. It has
no added preservatives, and consists of more than 50 chemicals,
with vanillin being the major compound.
Sarriette Base 199618 from Firmenich is a new herbal thujonic
specialty based on two Firmenich captive ingredients: Salviac
and Thuyaketone. Sarriette Base, which is a new derivative of
oxane, opens with aromatic herbal notes, dry notes similar to
cypress, and settles down to more green vegetal pepper notes
that are fresh and long-lasting.
SAFC offers isoamyl phenylacetate (98%) (FEMA# 2081,
CAS# 102-19-2), which is a natural, kosher and halal ingredient. Its taste characteristics are warm, rosy and honeylike with
phenyl chocolate nuances and dried fruit notes. Its odor is sweet
honey, cocoa, balsam, chocolate and castoreum animal. It can
be used in marshmallow, tomato, caramel and praline flavor
profiles. In fragrance, it can be used in amber, apple, jasmine,
tobacco, apricot, cream, fig and raisin.
The company also features lactone of cis-jasmone, 97%,
mixture of isomers, ≥97% (FEMA# 3937, CAS# 70851-61-5),
a kosher aromatic material that offers a clean, fruity, jasmine
Bell Flavors and Fragrances EMEA offers IBCH Saminol Ultra
(CAS# 6887-29-2; synonym: (3-( 2, 3,3-trimethyl-6-bicyclo[ 2. 2. 1]
heptanyl)cyclohexan-1-ol)), which is a colorless, clear viscous
liquid. It has a clean, sweet, woody sandalwood odor, with elements reminiscent of musk and amber. It has good stability in
alcoholic solutions, personal care products and detergents, and
moderate stability in strong acidic formulations. It is not stable
in oxidizing formulations.
The company also features isoamyl isovalerate (FEMA#
2085, CAS# 659-70-1; synonym: 3-methylbutyl 3-methylbutano-
ate), a clear, colorless to pale yellow liquid, which can be applied
in all types of fruity fragrances at use levels up to 8%. It shows
good effects in apricot, banana or passionfruit-type fragrances,
and can be used as a component in cosmetics. It has a sweet
and fruity odor with elements reminiscent of chocolate and
brandy. It offers good stability in alcoholic solutions, personal
care products and detergents, and moderate stability in strong
acidic or strong alkaline formulations.
Natural neryl/geranyl acetates 60/40 (FEMA#
2773 [60%], FEMA# 2509 [40%]) from Natural
Advantage occurs naturally in lemon oil, neroli
oil, and petitgrain bigarade. This worldwide nat-
ural kosher ingredient’s flavor at 10 ppm is
very sweet and deeply fruity, with citrus and
raspberry undertones. It is used in citrus,
neroli, raspberry, honey and other flavors in
which sweetness is essential with warm fruity
notes. Ratio of neryl acetate and geranyl acetate
can be adjusted per customer specs.
Symrise offers Mintonat (CAS# 67859-96-5, synonym: acetic
acid 3, 3,5-trimethyl-cyclohexyl ester), which combines green
herbal and floral notes with fresh clean aspects. This material is appropriate for boosting freshness and increasing the
dynamic nature of fragrances. It gives complexity and vivacity
to fragrances and has relative ease of use. It will boost pure flo-ralcies or give a green, fresh touch to various fragrance accords
at usage levels up to 25%. Thus, Mintonat is suitable for a wide
range of applications.
Treatt has expanded its range of Treattarome 100% natural
from the named food (FTNF) distillates with the launch of
Pineapple Treattarome 9736. Distilled exclusively from pineapple, Ananas comosus, this ingredient is manufactured using a
short-pass, low-temperature distillation process for maximum
flavor entrapment. Pineapple Treattarome captures the true
character of freshly sliced pineapple, imparting sharp, sweet
and fruity aromas, plus intense tropical, fruity flavors. Its watery
white color makes it particularly suitable for clear beverages.
It is also easy to use in dairy, juices and juice drinks, as well as
alcoholic options in which a dosage of 0.2% ensures a strong,
tropical, fruity profile.
The company offers other tropical Treattarome ingredients,
including Mango Treattarome, which enables the creation of
long-lasting, creamy, sweet mango flavors.
Taste Advantage offers natural cis-3-hexenyl isovalerate
(FEMA# 3498, Flavis# 09.505), also
known as hexenyl methylbutanoate. This
worldwide natural kosher ingredient
occurs naturally in peppermint oil. It has
a very fruity, green apple taste, and can
help characterize apple, peach, berry
and tea flavors. Typical
use rates are 0.01–0.20
ppm in finished products.
